Mother’s Day Vegan Biscotti Con Pinoli

Mother’s Day is here in the UK and she deserves nothing less than something as sweet and comforting she is! Try my Vegan Biscotti Con Pinoli from my hometown in Rome. Made with love and wholesome ingredients, these cookies are absolutely delicious (and mama-approved!).

Crisp and crunchy, these are typically served with Vin Santo (a style of Italian dessert wine) or taste great with an English cuppa tea.

Homemade edible treats are full of personality and love, making them the perfect gift for any occasion. Wrap up these Biscotti in colourful tissue paper or a pretty box/tin with a ribbon for a gift your mum will love.

Ingredients (makes 20 cookies)

  • 300g wholemeal flour
  • 100ml vegetable oil
  • 100ml marsala wine
  • 80g brown sugar (for a sugar free option, choose a natural brown sugar alternative – I prefer Sukrin Gold brand)
  • 2tsp baking powder
  • 3 tbsp pine nuts (any nuts will work)

Directions

  1. Mix all ingredients together until well blended (dough will be dry and crumbly)
  2. Pinch off small lumps of the dough to form 20 cookies
  3. Pre-heat oven to 180 and bake for 20 minutes or until golden
