Easy five-a-day: vegetable medley

Green vegetables are packed with vitamins, minerals and disease-fighting phytochemicals. They are also rich in fibre – an important nutrient for weight loss and maintenance.

Ingredients

  • 1 cup white cauliflower florets
  • 1 cup green cauliflower or broccoli
  • 1 cup green beans cut into 1 inch pieces
  • 1 cup green peas
  • 1 cup sliced button mushrooms
  • 1 teaspoon cumin seeds (high in iron, manganese, copper and calcium)
  • 1/2 teaspoon mustard seeds (rich source of B-complex vitamins, thiamin, vitamin E and minerals)
  • 1 inch finely chopped ginger (antioxidant and anti-inflammatory)
  • 1/2 turmeric powder (antioxidant and anti-inflammatory)
  • 1 tablespoon extra virgin olive oil

Directions

  1. In a pan, add 1 tablespoon of olive oil, 1 teaspoon of cumin seeds and 1 teaspoon of mustard seeds
  2. On medium heat (n.b. never cook olive oil on high heat) sauté for 1 minute until the mustard seeds sputter
  3. Add 1/2 a teaspoon of turmeric powder and chopped ginger
  4. Add all vegetables (cauliflower, broccoli, green beans, peas, mushrooms) and stir-fry on medium heat for 10 minutes
  5. Lightly sprinkle salt and black pepper to taste, and add lemon juice; chilli flakes optional
